Tabouli(Armenian Salad) - cooking recipe

Ingredients
    1 c. bulgar wheat (health food store or under brand name \"Allah\" in grocery stores)
    2 c. boiling water
    1/2 c. parsley shredded and 1/4 c. cilantro (optional)
    1/2 c. lemon juice
    1/3 c. olive oil
    1/2 c. celery, chopped small
    1 small can chopped olives
    3 tomatoes, chopped fine
    1 clove garlic, chopped or minced
    1 Tbsp. balsamic vinegar
Preparation
    Pour boiling water over bulgar wheat in a deep bowl. Cover and let sit 1 hour or until liquid is absorbed.
    Mix in all ingredients.
    Let sit in the refrigerator overnight.
