Squash Minestra - cooking recipe

Ingredients
    1/3 c. olive oil
    1 onion, cut into 8ths
    3 celery stalks and leaves, chopped
    4 zucchini, cubed
    1 1/2 c. tomatoes, chopped
    4 fresh basil leaves
    1/4 c. fresh parsley, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
    3 chicken bouillon cubes
    1 lb. potatoes, peeled and cubed
    1/4 lb. pasta
Preparation
    In
    large
    saucepan,
    heat oil and saute onion until it becomes
    transparent, but not brown.
    Add celery and zucchini; saute
    for
    a few minutes.
    Add tomatoes, basil, parsley, salt and pepper.
    Fill
    pot
    with
    water, about 3 inches above all vegetables and cook for 10 minutes.
    Add potatoes and bouillon cubes;
    cook
    on low heat until potatoes are tender.
    This can be served
    with
    cooked pasta (tobetti).
    Cook pasta according to package
    directions.
    Drain
    pasta
    and
    mix
    together with vegetable mixture.
    Serve immediately.
    Makes 6 to 8 servings.
