P'Nutty Chicken Salad Crepes - cooking recipe

Ingredients
    2 c. cooked chicken, diced
    2 hard-cooked eggs, chopped
    1/2 c. water chestnuts, chopped
    1/2 red bell pepper, diced
    1/2 c. spring onions, chopped
    3/4 c. roasted peanuts, chopped
    3/4 c. mayonnaise
    1 tsp. curry
    1/2 tsp. garlic salt
    1 tsp. lemon pepper
Preparation
    Combine chicken, eggs, water chestnuts, bell pepper, onions and 1/2 cup peanuts.
    Mix mayonnaise with seasonings.
    Pour over chicken mixture and toss.
    Place in Pyrex dish in a 375\u00b0 oven for 15 minutes.
    Spoon into crepes, fold and place on platter.
    Pour sauce over the top.
    Garnish with grated cheese, pepper, cherry tomatoes, parsley and chopped peanuts.
