Zucchini Bread - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    1 c. vegetable oil
    3 1/2 c. flour
    1 1/2 tsp. soda
    1 1/2 tsp. salt (optional)
    1 tsp. cinnamon
    3/4 tsp. baking powder
    2 c. grated unpeeled zucchini
    1 tsp. vanilla
    1 c. walnuts, chopped
    1 c. raisins
    1 tsp. vanilla
Preparation
    Beat eggs in large bowl.
    Gradually add sugar.
    Add oil and combined dry ingredients alternately with grated zucchini.
    Stir in chopped walnuts, raisins and vanilla.
    Bake in 2 greased and floured loaf pans on lower rack at 350\u00b0 for approximately 55 minutes.
    Turn onto cooling racks.
    Freezes well.
