Mock Apple Pie - cooking recipe

Ingredients
    2-crust (9-inch) pie pastry
    36 Ritz crackers, coarsely broken (about 1 3/4 c. crumbs)
    2 c. water
    1 1/2 c. sugar
    2 tsp. cream of tartar
    2 Tbsp. lemon juice
    grated rind of 1 lemon
    2 Tbsp. margarine
    1/2 tsp. ground cinnamon
Preparation
    In saucepan, bring water, sugar and cream of tartar to a boil; simmer for 15 minutes.
    Add lemon juice and rind.
    Remove from heat and let cool to lukewarm.
    Roll out pastry and line pie plate.
    Place crackers in crust.
    Pour syrup over crackers; do not stir.
    Dot with margarine.
    Sprinkle with cinnamon.
    Add top crust and seal edges.
    Slit top crust to allow steam to escape.
    Bake in a 425\u00b0 oven for 30 to 35 minutes or until crust is golden.
    Cool completely.
