Tabulah - Crushed Wheat Salad - cooking recipe

Ingredients
    1 c. fine burghul wheat
    6 fresh ripe tomatoes, peeled and finely chopped
    2 c. cilantro parsley, finely chopped
    2 c. onions, finely chopped
    juice of 4 lemons
    2/3 c. olive oil
    3 small bags radishes, finely chopped
    4 tsp. salt
    freshly ground black pepper
    4 Tbsp. fresh mint, finely chopped (optional)
Preparation
    Cover burghul with cold water and soak 1/2 hour.
    Drain and squeeze dry in dampened cloth.
    Place in large bowl and add all ingredients except oil.
    When thoroughly mixed, slowly add the oil, continuing to mix.
    Place on platter on bed of lettuce leaves and garnish with sliced black olives.
    Chill.
    Serves 10 to 12.
    Best made one day before serving.
