Sweet Potato Cake - cooking recipe
Ingredients

1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
4 Tbsp. hot water
2 1/2 c. sifted cake flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. raw sweet potatoes, grated
1 c. nuts, chopped
1 tsp. vanilla
Preparation

Blend sugar and oil.
Add egg yolks; beat well.
Add hot water.
Sift dry ingredients together; add to sugar-yolk mixture. Beat well.
Stir in potatoes, nuts and vanilla.
Fold in stiffly beaten egg whites.
Pour batter into 9-inch greased and floured cake pans.
Bake at 350\u00b0 for 25 to 30 minutes.
