New England Boiled Dinner - cooking recipe
Ingredients

4 lb. corned beef brisket
8 1/2 small white onions
1 cabbage
8 carrots
9 potatoes
8 parsnips
Preparation

Wash beef to remove brine.
Place in large kettle.
Cover with water and slowly bring to boil.
Cook 5 minutes.
Remove scum. Cover and simmer 2 1/2 hours.
Skim fat.
Return to rolling boil. Add whole onions, carrots, potatoes and parsnips.
Reduce heat and cook gently, uncovered, for 20 minutes.
Core and cut cabbage in eighths.
Add cabbage and cook 20 minutes.
Transfer meat to platter.
Arrange vegetables around meat.
Yields 8 servings.
