Lemony Apple Muffins - cooking recipe
Ingredients

2 c. all-purpose flour
4 tsp. baking powder
1/8 tsp. salt
1/2 c. plus 1 Tbsp. sugar, divided
1 apple, peeled, cored and chopped
1/3 c. butter, melted
zest of 1 lemon
2 eggs
1 c. milk
1 tsp. cinnamon
Preparation

In a large bowl, sift together flour, baking powder, salt and 1/2 cup sugar. Add apple; toss to coat and set aside. In a separate bowl, blend butter, lemon zest, eggs and milk. Gently stir into the flour mixture. Divide mixture equally among 12 greased muffin tins.
