Niko'S Salsa Verde - cooking recipe

Ingredients
    1 lb. tomatillos (Mexican green tomatoes)
    1 lb. hot peppers
    1 large onion, diced
    2 medium firm tomatoes, diced
    1 Tbsp. cilantro, dried
    1/2 tsp. granulated garlic
    2 Tbsp. vegetable oil
    10 oz. white vinegar
    4 tsp. salt
    1 tsp. sugar
    1 1/2 tsp. pickling spice
Preparation
    Mix all ingredients, but the pickling spice, in a pan and simmer 5 minutes.
    Fill your jars with washed hot peppers to within 1-inch of the top.
    Pour 1 1/2 teaspoons of pickling spice into each jar.
    Pour 10 ounces of hot mixture over the peppers, then fill the jar to 1/4-inch from the top with tap water.
    Put lid on and twist tight.
    Repeat the twisting 10 minutes later. You do not have to water bath these peppers.
    They'll be ready in 4 to 6 weeks.
