Chow-Chow - cooking recipe

Ingredients
    2 qt. finely chopped cabbage
    1 qt. peeled, chopped green tomatoes
    6 medium onions, chopped
    6 green peppers, coarsely chopped
    6 red peppers, coarsely chopped
    1/4 c. pickling salt
    6 c. vinegar, divided
    2 Tbsp. prepared mustard
    2 1/2 c. sugar
    2 Tbsp. mustard seed
    1 Tbsp. mixed pickling spice
    1 1/2 tsp. turmeric
    1 tsp. ginger
Preparation
    Combine vegetables and salt; stir well.
    Cover and let stand 8 hours.
    Drain well.
    Stir 2 tablespoons vinegar into mustard. Combine mustard, remaining vinegar and remaining 5 ingredients in a large kettle.
    Bring to a boil; reduce heat and simmer, uncovered, 20 minutes.
    Add vegetables.
    Simmer 10 minutes.
