Ingredients

2/3 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
2 c. milk
3 egg yolks
2 Tbsp. butter
2 tsp. vanilla
3/4 c. coconut
Preparation

Mix sugar and cornstarch; slowly add milk.
Beat egg yolks; add a little milk mixture to eggs.
Beat, then add eggs to milk. Add salt and butter.
Cook in microwave on High approximately 8 minutes.
Stir often to keep it from getting lumpy.
When almost thickened, add vanilla.
Cook another minute.
Stir in coconut. Put in baked pie shell; top with meringue.
