Polenta - cooking recipe

Ingredients
    3 c. water
    1 c. yellow corn meal
    1 tsp. salt
    2 Tbsp. salad oil
    1 small chopped onion
    6 oz. shredded Mozzarella cheese, divided
    1/4 c. Parmesan cheese
    3 eggs, beaten
    thin tomato sauce
Preparation
    Boil water, salt and oil.
    Add corn meal into thin, steady stream.
    Stir continuously until mixture comes away from sides of pan.
    Remove from heat.
    Stir in onions, (4 ounces; 1 cup) Mozzarella, Parmesan cheeses and eggs.
    Spread in oiled 8 x 8-inch pan.
    Bake at 350\u00b0 for 30 minutes.
    Remove and immediately spread with a thin layer of tomato sauce.
    Sprinkle with remaining Mozzarella over tomato sauce.
    Serves 8.
