Chicken Loaf - cooking recipe

Ingredients
    4 lb. hen or 2 fryers
    4 Tbsp. butter
    1/2 c. chopped celery
    3/4 c. chopped onions
    1/8 c. chopped green pepper
    1/4 c. flour
    1/8 c. cold water
    1 c. boiling chicken broth
    1/2 small jar pimentos, chipped
    1 can mushroom soup (undiluted)
    salt and pepper
    little red pepper
    2 eggs, slightly beaten
    25 or 30 Ritz crackers
Preparation
    Mix flour in about 1/8 cup cold water and add to chicken broth.
    Cool a minute or so to thicken.
    Add chicken, pimentos, mushroom soup, salt, pepper and red pepper, all to taste.
    Add eggs.
    Crush crackers and add to mixture.
    Add sauteed vegetables. Mix well.
    Pour into 2-quart baking dish.
    Put crumbled crackers (about 15) on top.
    Bake at 325\u00b0 or 350\u00b0 for 45 minutes.
    Make gravy with 3 cups of broth.
