Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 tsp. baking soda
    1 tsp. salt
    2 tsp. vanilla
    4 full c. raw zucchini, coarsely chopped
    3 c. flour, sifted with 1/4 tsp. baking powder
    3 tsp. cinnamon
    1 c. chopped nuts*
Preparation
    Mix well and pour into 2 oiled and floured 5 x 9-inch loaf pans.
    Bake 1 hour at 350\u00b0.
    Cool completely.
    Freezes well.
