Ingredients

8 c. sliced squash
3 c. sugar
2 c. onion, sliced and separated into rings
2 c. vinegar
2 tsp. celery seed
2 tsp. mustard seed
2 tsp. diced bell pepper
Preparation

Combine squash and onions, season with salt and set aside one hour.
Drain liquid from squash and add vinegar, sugar, celery seed, mustard seed and bell pepper and bring to boil, adding the squash.
Boil for approximately 2 to 3 minutes, place into hot jars and seal.
