Irish Potato Candy - cooking recipe

Ingredients

1 potato
1 lb. powdered sugar
peanut butter

Preparation

Boil potato until tender.
Mash with fork until smooth.
Add sugar and work into a dry dough.
Roll out between wax paper that has been sprinkled with sugar.
Spread peanut butter, then roll up like a jelly roll.
