Mushroom Onion Soup - cooking recipe

Ingredients
    2 c. fresh mushrooms (8 oz.)
    3 Tbsp. butter
    2 medium onions, chopped
    2 Tbsp. all-purpose flour
    5 c. chicken broth
    1/2 tsp. salt (optional)
    dash of pepper
    1/3 c. uncooked long grain rice
Preparation
    Trim mushrooms stems level with the caps.
    Finely chop the stems and thinly slice caps.
    In a large saucepan, melt butter. Add mushrooms and onions.
    Cook and stir over low heat for 5 minutes.
    Blend in flour.
    Add broth, salt and pepper.
    Cook, stirring constantly, until mixture boils.
    Reduce heat.
    Add rice; cover and simmer for 15 to 20 minutes or until the rice is tender. Yields 4 servings.
