The Black Eyes Of Texas(Black-Eyed Pea Casserole) - cooking recipe

Ingredients
    1 can jalapeno black-eyed peas, drained
    1 1/2 lb. ground beef or 1 chicken
    1 onion, chopped
    2 cloves garlic, minced
    1 can Ro-Tel tomatoes
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 can enchilada sauce (medium)
    16 corn tortillas, cut in eighths
    2 c. grated Cheddar cheese
Preparation
    Brown meat, onion and garlic.
    Mix next 4 ingredients into meat.
    Layer meat and sauce and tortillas.
    Add cheese last.
    Cook in oven at 350\u00b0 for 30 minutes.
