Lemon Curd - Microwave(Fills 20 Small Tarts) - cooking recipe

Ingredients
    2 large eggs
    pinch of salt
    3/4 c. sugar
    2 Tbsp. butter (room temperature)
    1 Tbsp. grated lemon peel
    1/4 c. lemon juice
Preparation
    Beat eggs in a 4-cup glass measuring cup.
    When smooth, add other ingredients with a wooden spoon.
    Cook 8 to 10 minutes on low, stirring every 2 minutes.
