Crazy Corn Nachos - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1/2 c. diced red pepper
1/2 c. chopped onion
3/4 c. whole kernel corn
4 oz. diced green chiles
1 c. sour cream
8 oz. softened cream cheese
2 tsp. chili powder
2 tsp. cumin, cayenne and pepper, ground
tortilla chips
4 slices crisp-fried bacon, crumbled
2 c. shredded Monterey Jack cheese
Preparation

Put oil in large skillet and saute red pepper, onion and corn until soft.
In bowl, blend sour cream, cream cheese, chili powder, cumin, cayenne, pepper and salt.
Fold into sauteed mixture.
Cover tortilla chips and sprinkle bacon and cheese on top.
