Ingredients

1 1/2 c. flour
1/3 c. sugar
1 tsp. baking powder
1/4 tsp. salt
1 egg
3/4 c. milk
2 Tbsp. vegetable oil
1 tsp. vanilla or optional flavor (almond is excellent)
Preparation

Measure and mix first four ingredients in 2-quart bowl.
Add milk, egg and oil.
Whisk to blend well.
Drop 1/4 cup amounts onto a hot griddle.
Turn when bubbles begin to break the surface. Serve with fresh fruit or warm maple syrup.
Can be frozen for later use!
