Duchess Potato Puff - cooking recipe

Ingredients
    2 1/4 c. water
    3 Tbsp. margarine or butter
    1/2 tsp. salt
    1/2 c. milk
    2 1/2 c. mashed potato flakes
    1 egg
    1/2 c. sour cream
    1/2 c. Cheddar cheese, shredded
Preparation
    Lightly butter 1 1/2-quart casserole.
    In medium saucepan, heat water, margarine and salt to rolling boil.
    Remove from heat. Stir in milk and potato flakes.
    Blend in egg, sour cream and cheese, mixing thoroughly.
    Spoon into prepared casserole.
    Bake at 350\u00b0 for 20 to 30 minutes until lightly golden brown and puffed.
    Refrigerate leftovers.
    Makes 6 to 8 servings.
