Squash Relish - cooking recipe

Ingredients
    12 c. yellow squash, diced
    2 green bell peppers, diced
    2 Tbsp. pickling spice
    2 1/2 c. sugar
    4 c. onion, diced
    2 red bell peppers, diced
    3 tsp. salt
    2 Tbsp. turmeric
    2 1/2 c. apple cider vinegar
Preparation
    Mix squash, onion and peppers.
    Let stand overnight.
    Add pickling spice, sugar, turmeric and vinegar.
    Cook until tender. Put in jars and seal.
    Makes approximately 7 pints.
