Vegetables And Rice(Low-Fat) - cooking recipe

Ingredients
    1 c. brown rice (uncooked)
    1 c. chicken broth
    1 2/3 c. water
    3 tsp. reduced calorie margarine
    1 1/2 c. chopped onion
    1 1/2 c. chopped green pepper
    1 (8 oz.) can sliced water chestnuts, drained
    1 1/2 Tbsp. soy sauce
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Combine the first 3 ingredients in a large saucepan; bring to a boil.
    Cover, reduce heat and simmer 50 minutes, or until moisture is absorbed and rice is tender.
    Melt margarine in a heavy skillet; add onion and green pepper.
    Cook over medium-high heat, stirring constantly, for 5 minutes.
    Add water chestnuts and mushrooms.
    Cover and simmer 5 minutes.
    Add soy sauce, salt and pepper; stir into rice.
