Rice Chicken - cooking recipe

Ingredients
    1 cut-up fryer or pieces
    4 Tbsp. butter or oleo
    1 c. raw rice
    chopped onion
    chopped green pepper (optional)
    chopped pimento (optional)
    chicken broth
Preparation
    Melt butter in large pan.
    Salt and pepper chicken; roll in butter.
    Brown with skin-side down.
    Bake 20 minutes in 450\u00b0 oven. (If not brown enough, run under broiler for a few minutes.)
    Lift chicken out; pour rice, onion, pepper and pimento in pan.
    Stir and spread evenly.
    Place chicken on top; pour broth to cover rice.
    Cover.
    Bake in 350\u00b0 oven for about 1 hour.
