Golden Meatball Casserole - cooking recipe

Ingredients
    1 lb. ground meat
    1 chopped onion
    1 can sliced carrots
    1 bell pepper
    1 c. rice
    2 c. water
    8 oz. Velveeta cheese
Preparation
    Mix meat and onions and form into small meatballs and cook well.
    Drain off fat.
    In the same skillet, add 1 cup long grain rice, water, bell pepper and carrots.
    Cover and cook for 25 minutes and add cubed cheese and simmer 5 minutes or until cheese melts.
