Ingredients

2/3 c. Minute rice
1/4 c. sugar
1/8 tsp. nutmeg
2 1/2 c. milk
1 Tbsp. butter
1 tsp. vanilla
1 egg yolk
2 Tbsp. milk
1 box vanilla pie filling pudding (the kind you cook)
2 c. milk
Preparation

In a medium saucepan, combine the first 6 ingredients.
Bring to a boil, then cook 20 minutes over low heat, stirring frequently.
In a bowl, beat egg yolk with 2 tablespoons milk and the pudding.
Add 2 more cups milk.
After you cook the rice mixture 20 minutes, add the pudding mixture slowly and cook until it thickens.
Add raisins when cooked, if you like.
