Carol Damato'S Eggplant Pie - cooking recipe

Ingredients
    1 pie shell
    1 lb. eggplant, cubed
    1 medium onion, chopped
    1 clove garlic, chopped
    1/4 c. butter
    1 tsp. salt
    3/4 tsp. oregano
    3/4 tsp. basil
    dash of red pepper
    1 small zucchini, sliced
    3/4 c. evaporated milk
    1 egg
    3 c. Mozzarella cheese, shredded
Preparation
    Saute eggplant, onion and garlic in butter.
    Add seasoning. Cover bottom and sides of pie crust with zucchini slices.
    Add the eggplant mixture.
    Combine the milk and egg; stir in the cheese. Pour this over the veggies.
    Preheat the oven and cookie sheet to 375\u00b0.
    Bake pie for 30 to 35 minutes.
