Banana Nut Bread - cooking recipe
Ingredients

1 1/2 c. sugar
1/2 c. shortening
2 large eggs
3 large extra ripe bananas, mashed
3 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. vanilla (I like to use 2 tsp.)
1/2 c. chopped pecans (or as desired)
Preparation

Cream shortening and sugar; add unbeaten eggs and vanilla. Blend thoroughly with mixer.
Add dry ingredients alternately with bananas, blending well after each addition.
Fold in nuts.
Pour into greased and floured loaf pans.
Makes 2 (1 pound) loaves. Bake in 325\u00b0 oven for 60 to 65 minutes.
Great use of overripe bananas!
