Roast Duckling With Rice Stuffing - cooking recipe

Ingredients
    1 (5 to 6 lb.) duckling
    1/2 c. rice
    1/2 c. onion (finely chopped)
    1 Tbsp. dried parsley
Preparation
    Thoroughly defrost duckling.
    Remove giblets, neck and excess fat.
    Salt the inside.
    Place in 8-quart pot, cover with cold water. Place in refrigerator 2 to 4 hours.
    Remove duckling and rinse thoroughly.
    Cook rice as instructed on package.
    Add onions and parsley.
    Preheat oven to 350\u00b0.
    Stuff duckling.
    Place on broiler pan which has been coated with cooking spray.
    Place duckling on pan and cover with aluminum foil.
    Bake for 1/2 hour. Cook for 3 1/2 hours.
