Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
2 tsp. ground ginger
1/2 tsp. salt
Preparation

Beat eggs at high speed for 5 minutes.
Gradually beat in sugar, then pumpkin and lemon juice.
Sift together the next 5 ingredients and mix in.
Spread mixture onto a well-greased and floured cookie sheet.
(Optional:
Sprinkle with 1 cup chopped nuts.)
Bake at 375\u00b0 for 15 minutes.
Cool slightly and place on small towel which has been sprinkled evenly with powdered sugar. Roll and cool.
Unroll and spread with Cream Cheese Frosting.
Roll and chill completely.
Sprinkle with confectioners sugar.
