Oklahoma Caviar - cooking recipe
Ingredients

6 (16 oz.) cans black-eyed peas, drained
1 1/2 c. diced onions
1 1/2 c. diced jalapeno peppers, seeds removed
4 oz. jar diced pimientos, drained
minced garlic to taste
2 c. Italian salad dressing
salt and hot pepper sauce to taste
Preparation

Adjust all ingredients to suit taste.
Mix all ingredients and marinate at least 3 days or more to fully develop flavor.
When ready to serve, drain and serve with big corn chips.
Makes 2 quarts.
This is good cold.
