Easy Going Meal - cooking recipe

Ingredients
    4 skinned and boned chicken breasts
    1 Tbsp. olive oil
    1 green or red pepper, cut into strips
    1 tsp. chili powder
    1/2 tsp. each: salt, black pepper and ground cumin
    1 c. long grain rice
    1 c. water
    1 small can tomato sauce
    2 Tbsp. parsley
Preparation
    Cut chicken into bite size pieces.
    Heat oil in a large, nonstick skillet over medium heat.
    Add chicken, green pepper and seasonings.
    Saute until chicken is lightly browned.
    Stir in rice until coated with seasonings.
    Stir in water and tomato sauce; bring to a boil, then cover skillet and reduce heat to low. Simmer until water is absorbed and rice is cooked.
    Remove from heat and add parsley. Cover and let stand for 5 minutes.
    This recipe is quite low in fat content.
