Sassy Black Bean Soup - cooking recipe

Ingredients
    1 tablespoon olive oil
    1 cup chopped fresh or frozen onion
    2 garlic cloves, minced (or 1/2 teaspoon garlic powder)
    2 (15 ounce) cans black beans, drained and rinsed
    1 (14.5 ounce) can stewed tomatoes, undrained and chopped
    1 (10.5 ounce) can chicken broth
    1/2 cup picante sauce
    1/4 cup water
    1 teaspoon ground cumin
    2 tablespoon lime juice
    chopped fresh cilantro (optional)
Preparation
    Heat oil in a large saucepan over medium heat until hot.
    Add onion and garlic; saut 5 minutes or until tender.
    Stir in beans and next 5 ingredients.
    Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
    Remove from heat and stir in lime juice. Ladle into bowls and garnish with cilantro, if desired.
    Makes six one-cup servings.
