Riso Verda(Green Rice) - cooking recipe

Ingredients
    1 1/2 c. chopped spinach
    1 c. chopped green onions
    1 c. chopped fresh parsley
    3 1/2 c. chicken broth
    2 c. rice
    2 Tbsp. olive oil
    2 Tbsp. butter
    1/4 tsp. black pepper
    1 tsp. salt (optional)
    1/2 c. Parmesan cheese (fresh shredded is best)
Preparation
    In a large skillet, add butter, olive oil, spinach, onions, parsley, salt and pepper.
    Saute for 5 minutes.
    Add rice and 1/2 of the chicken broth.
    Cook for 10 minutes.
    Add remainder of chicken broth and simmer for 20 minutes.
    Just before serving, add Parmesan cheese on the top.
    Cover until it melts then serve. This dish can be prepared the night before and it is still wonderful.
    Excellent with all meats and seafood!!!
