Southern Spoon Bread - cooking recipe
Ingredients

3 c. milk
1 tsp. salt
1 1/2 c. cornmeal
1/2 stick butter or oleo
2 tsp. baking powder
4 eggs, separated and beaten
Preparation

Heat 2 cups of milk to simmering.
Add salt, cornmeal and butter to hot milk.
Cook 10 minutes in double boiler.
Cool to lukewarm; add baking powder dissolved in 1 cup of cold milk.
Beat in egg yolks.
Fold in stiffly beaten whites.
Pour into deep buttered baking dish.
Bake at 400\u00b0 for 40 minutes or until knife comes out clean.
Serve hot with butter or ham gravy.
Serves 6.
