Eggplant In Oven - cooking recipe

Ingredients

1/2 c. mayonnaise
1/2 tsp. salt
1 Tbsp. minced onion
1/2 c. dry bread crumbs
1/3 c. Parmesan cheese
1/2 tsp. Italian seasoning
1 eggplant

Preparation

Peel and slice eggplant.
Mix mayonnaise, salt and onion and spread on sliced eggplant.
Mix remaining ingredients and roll eggplant slices in mixture to cover.
Place in 425\u00b0 oven for 15 to 20 minutes.
