Eggplant Fritters - cooking recipe
Ingredients

1 eggplant
1 large egg
1/2 c. flour
3 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 c. oil
1 tsp. vanilla
Preparation

Peel and cube eggplant.
Cook in salted water (to cover, until tender).
Drain thoroughly and mash.
Beat egg.
Blend in flour, sugar, baking powder and eggplant.
Drop by spoonful in oil on medium heat.
Brown, then turn and brown on the other side.
If dough seems too soft, add more flour.
Place on paper towel to cool.
