Zucchini Fritters - cooking recipe

Ingredients
    1 1/2 c. unpeeled zucchini, shredded
    1/4 c. flour
    1/2 tsp. basil
    2 Tbsp. Parmesan cheese
    dash of pepper
    1/2 tsp. oregano
    1/2 Tbsp. mayonnaise
    2 eggs, beaten
    oil for frying
Preparation
    Press shredded zucchini dry between paper towels.
    Put into large mixing bowl.
    Stir in flour, cheese, oregano, basil and pepper.
    Add mayonnaise and eggs.
    Mix well.
    Pour a thin layer of oil in skillet to cover base.
    Heat over medium heat.
    When oil is hot, spoon 2 tablespoons batter into a 2-inch diameter in skillet. Fry until golden brown on both sides, approximately 3 minutes a side.
