Twice Baked Potatoes(Lo-Fat) - cooking recipe

Ingredients
    4 medium baking potatoes (about 1 1/2 lb.)
    1 c. plain nonfat yogurt
    1/4 c. grated Parmesan cheese
    2 Tbsp. freeze-dried chives or parsley flakes
    1/4 tsp. salt
    1/8 tsp. pepper
    paprika
Preparation
    Heat oven to 400\u00b0. Bake the potatoes about 1 hour or until tender. Cut thin lengthwise slice from top of each potato.
    Scoop out potato, leaving a thin shell.
    Mash the potatoes until no lumps remain. Beat in remaining ingredients, except paprika, until fluffy. Sprinkle with paprika.
    Place shells on ungreased cookie sheet. Fill shells with potato mixture. Bake, uncovered, about 20 minutes or until filling is golden brown.
    Makes 4 servings.
