Dalma (Armenian Stuffed Vegetables) - cooking recipe
Ingredients

6 summer squash
6 medium Italian peppers
6 medium tomatoes
1 lb. ground beef or 1/2 lb. ground lamb or 1/2 lb. ground beef
1/2 c. white river rice
1/2 c. chopped onions
1/2 c. parsley
1 tsp. dry dill
1 c. canned tomatoes
1 c. hot water
1 1/2 tsp. salt
1/2 tsp. pepper
Preparation

Cut squash in half and remove pulp.
Cut near the top of the peppers and remove the seeds.
Save the tops.
Cut near the top of the tomatoes, not all the way off.
Scoop the pulp from tomatoes and reserve.
Mix meat with uncooked rice, onions, parsley, dill, salt, pepper and chopped pulp from 3 tomatoes and 3 squash.
Stuff vegetables loosely (allowing for expansion).
Replace pepper tops. Arrange filled vegetables in a 2-quart casserole dish, with cover.
Put tomatoes on top of peppers and squash.
