Jollof Rice(West Africa) - cooking recipe

Ingredients
    1 lb. lean beef, cubed
    1 lb. boneless chicken, cubed
    3 large onions
    3 tomatoes
    1/2 c. cooking oil
    1 can tomato puree
    1 tsp. black pepper
    1/4 tsp. hot red pepper
    2 tsp. thyme
    4 c. raw rice
    3 tsp. salt
    8 c. liquid (including 1 can tomato puree, broth and water)
    1 (10 oz.) pkg. frozen peas, cooked
Preparation
    Boil
    the cubed meats about 1/2 hour. Remove from broth and drain. Brown in cooking oil. Remove from oil. Slice onions and tomatoes
    and cook in the oil. Add 1 can tomato puree. Add black and red peppers and
    thyme.
    Add meats to this sauce and simmer for 1/2 hour. Cook rice, salt and liquid as directed on package, watching that it
    does
    not
    scorch.
    Cook\tthe peas. After rice is cooked, gently
    fold
    the
    sauce and cooked peas into
    it and serve
    while
    hot.\t(Cooked
    green\tbeans,\tgreen peppers or even French fried
    potatoes
    can be used instead of the peas.)
