Armadillo Eggs - cooking recipe
Ingredients

1 lb. Owen's hot sausage
1/2 lb. shredded Cheddar and Colby
2 c. Bisquick mix
whole jalapeno peppers, halved and seeded
Preparation

Mix first 3 ingredients at room temperature well.
Stuff each pepper half and roll stuffed peppers in remaining mixture to completely enclose pepper.
Place on baking sheet and bake at 375\u00b0 for 15 minutes, turning halfway for even browning.
Yield: approximately 24 to 30 \"eggs\" depending on size of eggs.
