Out Of This World Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    2 eggs, beaten
    1 small chopped onion
    salt and pepper to taste
    1/4 c. milk
    3/4 c. cornbread crumbs
    3 Tbsp. margarine
    grated Cheddar cheese
    buttered crumbs
Preparation
    Peel and cube eggplant and boil with small amount of water until tender; drain and mash. Add eggs, onion, salt, pepper, milk, corn bread crumbs, melted margarine and cheese. Mix well; pour into buttered casserole dish. Sprinkle top with buttered crumbs. Bake at 325\u00b0 for 25 to 30 minutes.
