Scalloped Sweet Potatoes - cooking recipe
Ingredients

4 c. sliced raw sweet potatoes (about 6 medium)
2 c. nonfat milk
1 tsp. salt
1 Tbsp. light molasses
1/4 tsp. ground nutmeg
1 tsp. ginger
1/4 c. lemon juice
Preparation

Lightly oil a 9 x 12-inch baking dish.
Preheat oven to 400\u00b0. Lay the slices of sweet potatoes in the baking dish, overlapping where necessary.
In a small bowl, combine milk, salt, molasses, nutmeg, ginger and lemon juice.
Pour over sweet potatoes and cover baking dish with foil.
Bake 1 hour or until lightly browned and all liquid is absorbed.
Makes 6 servings.
