Hawaiian Tea Cookies - cooking recipe

1 3/4 c. flour
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. butter or margarine
1 c. sugar
1 egg
1 Tbsp. lemon juice (add grated lemon rind for flavor)
2 tsp. vanilla
1 c. shredded coconut
Preparation

Shape dough into two 2-inch diameter rolls.
Roll in colored sugar to coat.
Wrap tightly and chill 4 hours. Cut thin slices using sawing motion, 1/4-inch thick.
Place 1-inch apart on a greased sheet. Bake at 375\u00b0 for 10 to 12 minutes.
