Spanish Frittata - cooking recipe

Ingredients
    1 large or several small baked or boiled potatoes, chilled or substitute 1 c. unsauced spaghetti or egg noodles, cut into 3-inch lengths
    1 medium onion
    1 medium zucchini
    1/2 green pepper
    3 eggs
    1/4 c. grated Parmesan cheese
    salt and black pepper to taste
    2 Tbsp. olive oil
    3 Tbsp. water
Preparation
    Cut potatoes, onion, zucchini and green pepper into medium dice.
    Using medium-high heat, in a nonstick 10-inch skillet, saute potatoes, onion, zucchini and green pepper in 2 tablespoons olive oil until lightly browned.
    Reduce heat to medium and add 3 eggs that have been beaten with 3 tablespoons of water, salt and pepper.
