Zucchini Cake - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. soda
1/4 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1/2 c. chopped nuts
Preparation

Beat eggs until light.
Add oil, sugar, zucchini and vanilla. Mix lightly but well.
Sift flour, soda, baking powder, salt and cinnamon.
Add to zucchini mixture; add nuts.
Bake in two greased 9 x 5-inch loaf pans at 325\u00b0 for 1 hour or until tests done. Remove from pans immediately and allow to cool on rack.
Frosting not necessary.
