Oyster Soup - cooking recipe
Ingredients

1 qt. milk
1 pt. stew oysters
4 Tbsp. butter
1 c. diced celery, chopped very fine
1 pt. water
2 Tbsp. flour
salt and pepper to taste
Preparation

Cook celery in the water until very tender.
Pour into colander and rub through using water and all.
Melt butter.
Add flour and blend together.
Scald milk.
Add and make a white sauce.
Keep hot over hot water.
Put oysters into a saucepan and plump well in their own liquor; remove from fire.
Chop and put through colander.
Add oysters and celery to milk.
Season and serve.
